A sweet thick milk dessert or rice pudding is called kheer. It is a very popular milk dessert of the Indian subcontinent….. made by rice, milk and sugar flavoured with cardamom powder, rose water, saffron.The dish garnishes with chopped cashews, pistachios, almonds and raisins…It has been proven kheer was part of ancient Indian diet that was mention in mythological books …but the real popularity of kheer was to serverd as prasad in north Indian temples. In that way kheer became an important part of religious rituals, white colour is symbol of purity and divinity. Most of the Indian prefered to made kheer during functions, festivals, birthday’s and small or big occaissons. It can be served either warm or chilled.. Typically consumed it during a meal or as a rich desert.Today I shown here, traditional style of kheer recipe.

मीठा गाढ़ा दूध जिसे चावल के सांथ पका कर बनाया जाता है, उसे खीर कहते हैं| यह दूध से बना बहुत ही मशहूर व्यंजन है| भारतीय महाद्वीप में, इसे दूध, चांवल, चीनी और स्वाद के लिए इलायची पावडर और गुलाब जल, केसर आदि मिला कर बनाया जाता है, और इसे काजू ,बादाम, पिस्ता, किशमिस आदि से सजाया जाता है| खीर का इतिहास बहुत पुराना है, इसका वर्णन धार्मिक ग्रंथो में भी पाया गया है ...पर खीर को पहचान मुख्य रूप से उत्तर भारत के मंदिरों में प्रसाद के रूप में मिला है इसलिये इसे धार्मिक कार्यो में अधिक महत्त्व दिया जाता रहा है| इसका सफ़ेद रंग शांति और देवत्व का प्रतीक है| आम तौर पर सभी हिन्दू धार्मिक कार्यो अथवा किसी भी त्यौहार जन्मदिन, शादी आदि कोई भी छोटे बड़े अवसरों पर इसे बनाना पसंद करते हैं| इसे गर्म या ठंडा परोसा कैसे भी परोसा जा सकता है ..आम तौर पर इसे भोजन के दौरान या फिर मिठाई के जैसे कभी भी परोसा जाता है, मै आज यहाँ पर खीर की पारंपरिक विधि दे रही हूँ|
