veg dum biryani is made with rice and mix veggies ,herbs and spices .Biryani is an aromatic ,flavorful and colorful rice dish made with specal variety of rice called basmati rice,traditionally BIRYANI made with diffrent type of cooking called dum cooking and also marinated meat and spices,veg biryani is another version ,making with marinated veggies and also making such a simpler without marination.

i have shared reastaurant style easy biryani recipe this is perfect spiced and lodaded with taste of veggies ,aromatic ,flavourful,it can be served with simple curd ,no need to heavy side dishes .

Ingredients

    2 cups basmati rice 

    Washed and soaked 30 mins 

    Whole spices  

    1 green cardamom 

    1 big cardamom 

    3 bay leaves 

    4 cloves 

    5 t0 6 black pepper 

    1 star flower 

    1 cinnamon stick 

    vegetables 

    1 cup cauliflower separated into small flower 

    1 medium carrot chopped into small diamonds 

    12 to 14 beans cut into small 

    1 small potato cut into cubes 

    2 medium onions sliced 

    Powder spices  

    1 tsp crushed ginger 

    1 tsp crushed garlic 

    2 green chilli slits 

    2 medium fine chopped tomatoes 

    3\4 tsp turmeric powder 

    Salt to taste  

    2 1\2 tbsp biryani masala 

    1 tsp coriander powder 

    1 tsp red chilli powder 

    1 tsp kashmiri red chilli powder 

    1\3 cup fresh curd 

    1 tbsp ghee 

    1\2 cup paneer coated with  

    Pinch of termeric ,chilli powder,salt 

    1 tsp roasted cumin  powder 

    2 tbsp cashwes  

    2 tbsp mint leaves 

    2 to 3 drops orange food color 

    4 to 5 saffrons soaked into 1 tsp water  

    2 to 3 drops kewra water or essence 

    Whole wheat dough to seal 

Recipe By

Method

  • Wash and soak the rice for half an hour,Drain and set a side. 

    Heat 1 tbsp ghee in a wok add all the whole spices cook a seconds add sufficient water add 1 tsp salt ,bring it to boil. 

    Add the soaked rice and mix slightly or mix once . 

    Cover and cook till rice is 70% cook . 

    Take out the rice with the whole spices at help of strainer. 

    Spread the rice out on a plate allow to cool. 

    Heat the oil in a cooker or deep pan,add cashews saute till they changes colour, take out, add coated paaneer cubes fry till golden and crisp take out and spread . 

    Add sliced onions saute on low to medium heat till light brown  and crisp ,take out half of fried onions and spread on to a plate for cool.reserve the water. 

    Add ginger paste , garic paste and saute a minute ,add 2 green chilli slits , saute a seconds add the cauliflower, beasns ,potatoes , carrots saute five minutes. 

    Add coriander powder ,turmeric powder, chillipowder, biryani masala , salt saute 2 to 3 minutes . 

    Add curd and 1 tbsp ghee ,1 tsp kashmiri red chilli powder mix well, add chopped tomatoes saute  two minutes or till tomatoes get soft . 

    Add 1 and 1\2 cup remaining rice water keep for boiling spread half of cooked rice over the  vegetable 

    Sprinkle half browned onions ,haif fried  panner cubes , fried cashews ,few mint leaves and few drops  orange food color,spread reamining cooked rice , browned onions ,mint leaves , fried cashews and fried panner .  

    Sprinkle saffron water and kewra water over the rice . 

    Cover the pan or cooker with lid and seal with the dough  for dum ,cook on low heat for 12 to 13 minutes. 

    After 12 to 13 minutes remove from heat and allow to rest 5 minutes . 

    Garnish with chopped coriander and mint leaves ,Serve directly with onion raita or fresh curd .
     

    TIPS -

    If you like too spice biryani add 1 tsp pav bhaji masala also . 

    using cooker and  using pan lid  for dum biryani.
