poha, kanda poha, aloo poha is a quick breakfast recipe made with flattened rice and some light vegetables like potato, onions ,spices and nuts . it’s a simple dish does not need any accompaniment also garnish wih raw onions and thin sev. I have shared very easy way to make it at home .
300 g poha
4 green chillies
4 tbsp fresh coriander
4 tbsp oil
¼ cup peanuts
1 medium potato
2 medium onions
½ tsp cumin seeds
½ tsp mustard seeds
1 tsp turmeric
1 tsp sugar
1 ½ tsp salt
1.if you want to make dry and non sticky poha , you will need to choose medium flakes.if you use thin flakes poha will get mushy after rinsing . if you will take very thick poha soak it 2 minutes after that wash 2 to 3 times .
2 . place the beaten rice in a colander or bowl or pot . rinse them well with water and drain completely.if you feel after first rinse they turn soft then no need to rinsing further cover with lid and keep aside.
3.Peel all the onions and fine chopped , peel the potatoes and make thin slices with the help of slicer , if you make thin slices of potatoes with the slicer potatoes will cooked within minutes .
4.Check poha has softened , poha absorbed the water and softened in about 5 minutes . after that run your fingers lightly in the soaked flattened rice and break the lumps .add ¾ tsp salt , 1 tsp sugar and 2 tbsp chopped coriander and set aside. Yet they are not soft sprinkle some water and set aside till the tempering is ready.
5.Heat 4 tbsp oil in a kadai on medium heat add peanuts, fry till they turn light brown and crisp . drain and take out.
6.On the remaining oil add mustard seeds and cumin seeds let them splutter.add the chopped chillies saute 5 seconds, add chopped potato stir continue to cook for 1 to 2 minutes or till the potato half cooked.
7.Add the onions and continue saute till the onions gets translucent and potato is cooked
Add the turmeric powder and ¼ tsp salt stir well for the taste add again 2 chopped green chillies stir saute a minute add the beaten rice and stir lightly reduce the heat to low. Cover and cook to 4 to 5 minutes or till the flattened rice heated and steamed cooked. If poha gets very dry sprinkle 2 to 3 tbsp water and cover the lid and cooked 2 minutes on low heat.add the chopped coriander and lemon juice stir lightly .
8.Garnish with chopped fresh coriander and thin sev and serve hot.
